Pico is such a delicious, fresh summer item. It’s especially wonderful if you can use produce that is right from your garden, but story bought is great as well! It is great with just chips or as a topping on burgers, nachos, or whatever else you’d like.

Ingredients:
- 1 medium onion
- 2 jalapenos
- 3 medium tomatoes
- Juice of 1 lime
- 1 cup cilantro (pre-chopped)
- 1 tsp kosher salt
Directions:
1. Chop onion, jalapenos, cilantro, and tomatoes into small cubes. If you want the pico less spicy, use only 1 jalapeno, or remove the seeds from both. If you want it more spicy, add another jalapeno.
2. Add salt and toss everything together.
3. Let the mixture sit so everything can combine. The longer you let the mixture sit, the better it tastes. You can cover it and leave it in the fridge overnight to develop the flavors.
